His book, Liquid Intelligence is an amazing exposition and exploration of mixed drinks. Praise for this book includes this from Harold McGee: “Dave Arnold is the smartest person I know in the world of food and drink. He’s relentless in his pursuit of understanding, of improved and new techniques, and above all, of deliciousness. Cocktail enthusiasts and professionals alike will find insights and inspiration galore in Liquid Intelligence.”

Dave was an early player in the modernist food movement as an educator, writer, blogger, and inventor, and headed the first Culinary Technology Department at the French Culinary Institute (now the International Culinary Center).

He is host of the radio program “Cooking Issues” and is a culinary equipment designer focusing on modernist cooking methods.
